CHOCOLATE ECLAIRS
Chocolate Eclairs are made by filling a crisp, buttery eclair shell with a light, creamy vanilla pastry cream and glazing it with a rich, chocolate icing.
INGREDIENTS:
VANILLA PUDDING
- 3/4 cup granulated sugar
 - 1/3 cup flour
 - 1/4 teaspoon salt
 - 2 cups milk
 - 3 egg yolks, beaten
 - 2 tablespoons butter
 - 1 1/2 teaspoons vanilla
 
PASTRY CREAM
- Vanilla Pudding (above)
 - 1/2 cup whipping cream
 
PASTRY
- 1 cup water
 - 8 tablespoons (1 stick) unsalted butter
 - 1/2 teaspoon salt
 - 1 1/2 teaspoons sugar
 - 1 cup all-purpose flour
 - 3 eggs, plus 1 extra, if needed
 
SHINY CHOCOLATE GLAZE
- 1 cup semisweet chocolate chips
 - 2 tablespoons margarine or butter
 - 1/3 cup light corn syrup
 - 3 teaspoons water
