Homemade Banana Cream Pie


This homemade banana cream pie is phenomenal. You’ll go bananas for it. A buttery crust, a seriously luscious vanilla pudding filling, big chunks of tender bananas, cinnamon for good measure, and lightly sweetened whipped cream to up the ante. Yield: 1 9-INCH PIE

Ingredients:
CRUST & FILLING
  • Homemade pie crust (recipe makes 2 crusts; you can halve the crust recipe or freeze the 2nd half)1
  • 1 and 3/4 cups (420ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (100g) granulated sugar
  • 1/8 teaspoon salt
  • 4 large egg yolks
  • 1/4 cup (30g) cornstarch
  • 1 and 1/2 teaspoons pure vanilla extract
  • 2 Tablespoons (28g) unsalted butter, softened to room temperature
  • 4 bananas
  • optional: sprinkle of ground cinnamon


WHIPPED CREAM
  • 1 cup (240ml) heavy cream
  • 2 Tablespoons (15g) confectioners' sugar
  • 1/2 teaspoon pure vanilla extract
